Servings – 4
Ingredients:
- 5 cups of zucchini shredded
- 1 yellow onion diced
- 1 carrot grated
- 2 cloves of garlic minced
- 2 cups of cream (or milk substitute)
- 2 cups of broth (chicken or veg)
- 2 tablespoons of butter
- 1 tablespoon of tamari
- ¼ tsp each of rosemary, thyme, celery salt, sea salt
- Dashes of ground black pepper
- 1 cup of shredded cheddar – optional
Instructions:
- In a soup pot add the butter, onions, and carrots, and cook on medium heat for 5 minutes.
- Then add the zucchini, garlic, and spices, and continue cooking for another 5 minutes.
- Add to the pot the soup broth and tamari. Let simmer for about 20 minutes.
- Now put in the cream and gently heat back up.
- When heated, it is ready to serve. You may sprinkle in the cheddar cheese if you choose.
