Ingredients:
- 2 cups arugula (or baby bok choy)
- 1 tomato cut into wedges (optional)
- 3 tsp pine nuts or walnuts
- 1 tsp olive oil
- pinch of garlic salt
- 3 tbsp freshly grated parmesan or pecorino romano
Instructions:
- Split arugula over two plates and add the tomatoes.
- Drizzle the olive oil and sprinkle with garlic salt.
- Add the pine nuts and finish off with the parmesan.
