Easy Bean Salad

Prep Time – 20 min

Total Time – 20 min

Servings – 10

Ingredients:

  • 3 BPA-free cans of black beans (or any bean of choice)
  • 2 peppers (any colour) diced
  • 1 medium red onion
  • 1 handful of fresh parsley chopped
  • Juice of 2 lemons
  • 2 tablespoons of olive oil
  • Dash of salt to taste

Instructions:

  1. Rinse off beans in a colander and drain. Put into a mixing bowl.
  2. To the bowl, add the rest of ingredients and mix well.
  3. It’s ready to serve and will keep in the fridge for 3-4 days.

*If you prefer, you may cook the beans from scratch.
