Fall Harvest Winter Stew

Prep Time – 30 min

Total Time – 75 min

Servings – 4-6

Ingredients:

  • 2 packages of ground chicken or turkey (approx. 450g each)
  • 12 turnips sliced
  • 8 carrots sliced
  • 6 sweet potatoes sliced
  • 3 potatoes chopped (substitute with more sweet potatoes if you are sensitive to nightshade veggies)
  • 3 parsnips sliced
  • 2 cooking onions coarsely chopped
  • 8 garlic cloves skinned and left whole
  • ½ cup butter
  • 2 teaspoons each of thyme, rosemary and thyme
  • 2 tablespoons of tamari sauce

Instructions:

  1. Pre-heat oven to 450F (230C).
  2. In a small pan melt butter and add the herbs.
  3. In a large roasting pan add the veggies and drizzle butter mixture over top. Cover and put in the oven. Set timer for 20 mins. After timer goes off, stir the mixture and put back in oven for 25 more minutes setting the timer.
  4. While the veggies are cooking, in a large skillet with a pat of butter, add the meat on medium heat.
  5. While the meat cooks, add tamari and make sure you break it up into tiny pieces while stirring for about 10 minutes.
  6. When the timer goes off for the vegetables, make sure they are cooked thoroughly and then add meat mixture stirring well.
  7. It’s now ready to serve. Add a dash of salt and pepper for added flavour.
