Hearty Mung Bean Stew

Prep Time – 60 min

Total Time – 85 min

Servings – 4-6

Ingredients:

  • 4 cups of water
  • 2 cups of mung beans (uncooked)
  • ¼ cup of butter
  • 1 tablespoon of cumin
  • 2 tsp of sea salt
  • 1 tsp each of curry powder and garlic salt
  • ½ tsp of coriander seeds

Instructions:

  1. In a large pot add mung beans and some water, enough to cover an inch or more over the bean surface.
  2. Bring this to a boil. Take off burner and let sit for 1hour.
  3. After 1 hour, rinse off the beans and drain through a strainer. Put back in pot.
  4. To the pot, add 4 cups of water and the rest of ingredients. Bring to a boil.
  5. Turn heat down to medium and let simmer for about 25 minutes or until mung beans have split, stirring occasionally.
  6. The stew is now ready to serve. You may pour this on a bed of cooked quinoa or eat alone.

     This will keep for up to a week in the fridge so an extra batch could be made.
