Ingredients:
- 6 cups of canned black beans (BPA-free) or cook from scratch see below*
- 4 cups of kale, chopped
- 1 ½ cups of diced yellow onion
- ½ cup of shredded carrot
- ½ cup of thinly sliced celery
- 3 tbsp of minced garlic
- 4 cups of vegetable or chicken broth (liquid)
- 2 cups of water
- 2 tbsp of butter
- 1 tsp of apple cider vinegar
- 2 tsp of smoked paprika powder
- 2 tsp of chipotle powder
- 1 tsp of sea salt
- ½ tsp of ground black pepper
*To cook beans from scratch – In a big pot add 2 cups of dried black beans and 8 cups of water. Bring to a boil and cook for 5 minutes. Put aside and let soak for 1 hour. Then bring back to a boil and on medium heat cook for about 80 minutes. You could also pre-soak the beans overnight (2 cups dried to 8 cups of water) to shorten cooking time. Put these aside until needed.
Instructions:
- In a big soup pot add entire ingredients except for the beans and soup broth. Cook on medium heat for about 10 minutes until vegetables are slightly tender.
- Next add in the beans and liquid broth and cook for an additional 30 minutes. It’s now ready to serve.
Optional: garnish with some fresh cilantro or shredded cheddar.
