Vegetable Frittata

Prep Time – 20 min

Total Time – 60 min

Servings – 4-6

Ingredients:

  • 8 large eggs
  • 1 cup of diced onion
  • 1 cup of cherry tomatoes (cut in half)
  • ½ cup of chopped broccoli (bite sized pieces)
  • ½ cup sliced mushrooms
  • ½ cup of shredded cheddar (old has more flavour)
  • ½ cup of sour cream (or Greek yogurt can be used)
  • 2 tbsp of butter
  • 1 tsp each of garlic powder and rosemary
  • ½ tsp of salt
  • ¼ tsp of ground black pepper

Instructions:

  1. Grease a pie dish with butter and place it on top of a baking sheet. Pre-heat oven to 350F.              
  2. On medium heat, sauté the broccoli, mushrooms and onions in butter for 5 minutes. Add to the pie dish and spread evenly. Sprinkle tomatoes and then cheese over top.
  3. In a medium sized bowl beat the 8 eggs, sour cream and all seasonings together.
  4. Slowly add egg mixture to pie dish covering vegetables.
  5. Bake in oven, sitting on baking sheet for about 40 minutes or until knife comes out clean, when centre is poked.
  6. Can be eaten warm or cold, served with side dish of choice.
